Gougères - aka cheese puff rolls were invented in the 17th century in Burgundy, France and are made from wheat flour pâte à choux dough (cooked in a saucepan then baked) lacey, crispy, buttery, golden, with the nutty flavor of real Swiss Gruyère cheese from Lawrence, Kansas's own Au Marche, garlic chive and a little Italian Calabrian chili to give it a gentle but noticeable kick - these savory delights make every meal a trip to France.
